May 21 2026 For immediate release NEW SUSHI CONCEPT SALTWATER TO DEBUT IN SOHO Shaftesbury Capital has announced that Saltwater, a new premium takeaway sushi concept, has signed for its debut location at 3 - 4 Berwick Street, Soho, joining one of London's most established culinary destinations. Created by Elliot Milne, who is also behind all-day Australian eatery Milk Beach, Saltwater introduces a refined quick-service offer inspired by the dynamic takeaway sushi bars in Sydney and L.A. The 2,500 sq ft concept will present a curated selection of freshly prepared handrolls, nigiri, and hot donburi bowls. Widely recognised as a defining feature of modern Australian sushi culture, the handroll is a freshly prepared, long maki roll designed for ease and convenience. Saltwater's interiors will feature a spacious counter and open preparation area, showcasing craftsmanship and quality, and a relaxed seating area for inside dining. The brand's modern, energetic character will complement Soho's evolving tenant mix, further reinforcing the neighbourhood reputation for innovative, globally influenced concepts and debuts.
