I'd now like to play a short video before we begin. In an emerging wine region where the traditions aren't set, We're defining the styles of English wine with every vintage that passes. The similarities between English sparkling wine and champagne are clear. We use traditional method for our sparkling wines. We use the grape varieties, Chardonnay, Pinot Noir, and Pinot Meunier. And we have the same chalk terroir soil that we're blessed with. But the differences between champagne and English sparkling wine are as if not more important. Our climate is on average one degree cooler than champagne, and this cool maritime climate allows our grapes to ripen with a higher natural acidity leading to the fresh and crisp taste. When you stand at the top of a chalky slope looking down southwards and the sun is coming over and you think this could be the best vineyard in England. We just don't know it yet.
