The concept was the brainchild of EcoPAS, LLC and the company enlisted Greenbelt to fabricate a proprietary smart condenser system to capture escaping alcohol vapor produced during winery fermentation, a vapor that contributes to the formation of smog, an ongoing challenge in many parts of California.\n\nMore than 80 percent of the wine produced in the United States is made in California. EcoPAS set out to create an affordable and effective system to capture both ethanol (alcohol) vapor, as well as other volatile aromatics, which can be retained to improve the original wine, or sold separately as an aromatic spirit (think grape vodka).
