Unlike conventional freeze drying technology, customers have the ability to select moisture content in the end product, allowing the creation of customized shelf-stable products that more closely resemble fruit or vegetables in their fresh state.\n\nRiverbend Plantation Inc. (\"Riverbend\") of Saskatoon, Saskatchewan, will lease the installed nutraREV unit for a period of one year in order to produce samples of dried Saskatoon berries for distribution in North American and European markets. The company's goal is to introduce the fruit to a wider consumer base, and to capitalize on the increased global demand for dehydrated fruits and fruit products by health-conscious consumers.\n\nDr. Venkatesh Meda of the Agriculture and Bioresource Engineering Department at the University of Saskatchewan will be working with Riverbend to oversee the operations and performance of the nutraREV technology.
